Alfredooooo My Love

There’s nothing not to crave about white sauce! 

This is a quick and simplified, and healthier (by that I meant not as detrimental) version of Alfredo Pasta.  Whyyy… because I didn’t use butter and parmesan cheese. Because I have none in my cupboard and I didn’t have the time to buy before this needed to be cooked 😂 I’m seizing the opportunity to cook deliciously for my voice teacher. And fortunately she patronizes my dishes 👌 Since the prime ingredients weren’t available, I was quite anxious if it’ll turn out still delectable. But it did. 😊 

I used flat spaghetti for the dish, but I would recommend the fettucine.  Instead of butter, I sauteed minced garlic with regular oil, added vegetarian ham (yup, my recipes are meatless), and then the all purpose cream. I am lacto ovo vegetarian so we still use dairy in our food, but sparingly.  Put some pasta water in it, and flavored the white sauce with salt, pepper, vegetarian “fish” sauce, and mushroom powder. When it is done cooking, the pasta dove in!! Hehe kid. I still added grated processed cheese (it’s not real cheese) to replenish the lack of parmesan.  Izzooo yummy still. 😊

Chicken(less) Lomi

It’s rainy season again here in the Philippines.  The trend always at the supper table is warm soup for the taste buds and the belly and the heart.  Lomi is one of my favorite soup options when the weather is cooold.  It was popularized by Batangas kitchens to their roadside carinderias as comfort food for travelers.  It is cooked with chicken and lomi noodles with a few vegetables, then made a little bit thick by egg and corn starch. Batangas lomis are generally thick because they add flour to the soup, but for now I opt not to do that.  Also, instead of thick lomi I used miki noodles.  And because no chickens were killed in this recipe, I grabbed the tofu from the chiller, cut it to bits, fried ’em and let them join in the fun.

I want a lot of spring onions in all my soups, especially those with noodles. ❤

For this recipe that serves 10, here are my ingredients:

1 big onion, chopped

6 cloves garlic, minced

1/4 kg miki noodles

1 medium carrot, julienned

Small bunch of baguio pechay, cut into strips

Half a block of tofu, cut to bite size pieces and pan fried

2 tbps corn starch dissolved in water

1 egg, beaten

Spring oniooooonsssssss

Vegetarian ham (optional)

Instructions:

Saute garlic and onions for a few minutes.  Add carrots.  Pour in water, about 8 cups. Add your vegetable seasoning (mushroom powder in my case) and ground black pepper. Let boil.  Add miki noodles, tofu and pechay. Season again with salt and vegetarian fish sauce.  Add spring onions, but leave some for toppings.  Then pour in beaten egg.  Mix thoroughly, then add corn starch.  Add more according to your desired consistency.  Turn the heat off. Top your bowl with remaining spring onions.

You may add vegetarian ham for more meaty flavor.  You can also top roasted garlic for a roasty… flavor. 😅

Mushroom Garlic Pepper Steak (Jollibee inspired)

Beef steak for vegetarians guys! When I was a carnivore (lol) my favorite fastfood meal is found at Jollibee.  It is the most popular fastfood chain here in the Philippines.  They have that budget meal called the mushroom pepper steak, with roasted garlic, button mushrooms and beef sirloin and black peppah! But now my cravings will be best solved, because there is always a healthier option for us veggie bloods!

Here are the ingredients for 6 servings:

1 can jolly button mushrooms pieces and stems

1 bulb of garlic, minced

Soy sauce and pepper to taste

The special ingredient here that you cannot find in your cupboard is the mock meat which was all the way from Ethiopia. 

You prepare this by placing the dried meat in boiling water and cooking this for 1 and a half minute. Drain excess water. Pan fry for about 5 minutes.  

The cooking procedure is simple: roast garlic til it is golden brown, add your mushrooms, soy sauce, meat, pepper and salt. And then make it delicious! 😁

Cooking is my greatest embarrassment for a time.  But because it has always been my excitement to learn, the challenge is before me to acquire the science good daughters and good wives cannot dispense with.  Kitchen work is so much fun and will surely give you a sense of accomplishment. It’s like painting a masterpiece. You will not consider it a chore if you will change your views and consider it more as an art.  Not only tummies but also your heart will be satisfied, in cooking food that will also delight your dear ones that will eat.

Friday in the Bible is a day of preparation for the Sabbath.  Because Sabbath is the Lord’s ownership, we do all our secular necessities on Friday, including preparing our dishes to be served during Sabbath lunch.  For tomorrow’s assignment we were counted to prepare.., peanut stew.  And taaa daaa, I’ve delishly cooked one of my favorite to-pair-with-white-rice dishes! This is my most favorite… actually 😂 

Kare-Kare is a classic Filipino dish made with creamy peanut sauce, validating that peanut butter is not only for your jelly sandwiches.  The main part is the stewed oxtail and then complemented with eggplants, string beans and pechay. Because I am a vegetarian (it’s part of our practices as SDA which I hope to discuss later on), I will exclude the source of evil —- le cholesterol and uric acid in this recipe and make the veggies my main characters!! 😂 And we’ll rename it Vegetable Kare-Kare.  I just loooove this dish and cooking it as well 😍 It is so easy to make, but the challenge for me is how to cook without overcooking or undercooking the veggies.  But if you have well mastered your estimations, I say you’re good to go.  I used McCormick KareKare mix because ground rice and annato seeds aren’t available in my cupboard. And in stores.  It’s a good mix though. 

The dish should cater to 15 people, 2 packs of the ready mix for this.  Used 5 eggplants, 50 1-inch string beans, 4 small bundles of pechay, 1 medium sized banana blossom, and a can of loma linda chicken for mock meat. Try it, you’ll love it. Karekare’s famous sidekick is the bagoong, but since I wasn’t able to provide a vegetarian ver (made usually with black beans (Vegetarian cooks are the most creative and innovative. Period.)) I added more taste to the usual taste of the sauce.

Baby Steps

I made my first stitches and boy was I happy with it.  Even though they were skipped stitches 😂 it took me some time to make the thread stitch ya know so you could guess why I feel triumphant.  🎊 Baby steps do I move; but no matter! as long as I move. I still have to experiment on the thread tension and the kind of fabric I’m using. Dad promised that if he sees I’m getting a good use of the portable sewing machine, he’ll get me the more professional one 💓 you’re going to be proud daddy !!  

😅😅😅😅 it’s terrible but it still makes me happy lol. I feel accomplished! To someone who knows how to fix the issues that I’m having, your help is kindly regarded. Heh heh heh

I love my new hobby… it teaches me to waste no leisure time in social media, which really is a time and energy… and sanity eater.

HABITS OF YOUTH: Children, teens and young adults are more likely to use social media, and more likely to spend hours of their day posting and scrolling through feeds.

This daily use of social media exposes young minds to constant comparison with unreal expectations, said Dr. Matt Stanley, a psychiatrist for Avera Behavioral Health.

“What our children are exposed to at an earlier age has changed dramatically over the last decade and a half,” Stanley said.

Social media – for good or for bad? Not bad per se but, naahh. I can live life more without it.

Believe me, I have long been struggling to accomplish this messy work.  The struggle is very real. For months. Messy, because when things go out of control, the digital world can really make a total mess out of your life. 😨 As to my confessions I’ve repeatedly installed and uninstalled Instagram and Messenger, because the willpower is not overpowering the habit. I reckon that it makes no sense staying up late, eyes though tired, very glued to the cellphone screen.  Not only does it make no sense but also, the habit is detrimental in an unusual, unseen, but gradually felt manner. But since I am writing this now, I hope this would make my stubborn self totally realize, that addiction to social media really does disarrange your system.  In more straight words, it’ll make you insane.

Boulevard of Vanity

The wide accessibility of the internet opens a wider avenue for people to show off.  You can bust the once coveted SLR cameras for high quality camera smartphones and easily upload what you have been up to, what you are eating and who you are with on your recent getaway, for unconcerned people to see.   This may not annoy as the feed is scrolled, but it surely will effect in the subconscience.  You turn off the screen of your phone with a changed mind, tending to worldly things until you are doing the bad customs yourself which you used to abhor.  And worse than this is the selfie mania. What made these bad impressions dawn upon me are the repeated selfies of a person I follow, which was really annoying and basically turned me off.  Soon did I assess myself, am I pissed because I wanted to do the same thing?  Maybe that’s it. I am jealous. But I thought I wouldn’t do it either, because as much as it made me annoyed, so would other people be when their feed would be flooded by my ultra filtered beauty selfies 😊😂 so good. It’s not envy after all. True beauty will not strive to exhibit itself. Insecurities will 😉

Invading Privacy made Fashionable

The dish of the day for most social environments is the life of other people.  The disposition to be a stalker of your boyfriend’s ex, of someone you envy so much, of your popular colleague, is made highly possible without these persons knowing you are keeping a good eye on them.  Tell you, it is a life destroyer to be a constant dweller of what other people show on the internet. It really is a fake life you are seeing; being able to behold only the outward demeanor and not the character of the person.  You will lose your self respect by the habit, as you make yourself unproductive and covetous.  

Higher risks of lowering self esteem, heightening depression

“We forget that relational aggression comes from insecurity and feeling awful about yourself, and wanting to put other people down so you feel better.”

Peer acceptance is a big thing for adolescents, and many of them care about their image as much as a politician running for office, and to them it can feel as serious. Add to that the fact that kids today are getting actual polling data on how much people like them or their appearance via things like “likes.” It’s enough to turn anyone’s head. Who wouldn’t want to make herself look cooler if she can? So kids can spend hours pruning their online identities, trying to project an idealized image. Teenage girls sort through hundreds of photos, agonizing over which ones to post online. Boys compete for attention by trying to out-gross one other, pushing the envelope as much as they can in the already disinhibited atmosphere online. Kids gang up on each other.

Adolescents have always been doing this, but with the advent of social media they are faced with more opportunities—and more traps—than ever before. When kids scroll through their feeds and see how great everyone seems, it only adds to the pressure. We’re used to worrying about the impractical ideals that photoshopped magazine models give to our kids, but what happens with the kid next door is photoshopped, too? Even more confusing, what about when your own profile doesn’t really represent the person that you feel like you are on the inside?

“Adolescence and the early twenties in particular are the years in which you are acutely aware of the contrasts between who you appear to be and who you think you are,” says Dr. Wick. “It’s similar to the ‘imposter syndrome’ in psychology. As you get older and acquire more mastery, you begin to realize that you actually are good at some things, and then you feel that gap hopefully narrow. But imagine having your deepest darkest fear be that you aren’t as good as you look, and then imagine needing to look that good all the time! It’s exhausting.”

As Dr. Steiner-Adair explains, “Self-esteem comes from consolidating who you are.” The more identities you have, and the more time you spend pretending to be someone you aren’t, the harder it’s going to be to feel good about yourself.

But more importantly…

Time is wasted if you will not control your urges to be socially updated.  Life is not meant for show, for flattery of other people so that in turn they would do the same.  Character is marred.  Selfishness is the prime principle of the enemy of righteousness, and social media will set that on fire. If you want to be really happy, selflessness is the key.  To cure ourselves of insecurities, or the urges of thinking we are better off than others, and the depression that is sure to follow when we do not get the approbation that we want, let us be busy minding other people’s welfare.  Thus our minds will not experience degeneration, as this present generation is experiencing.

Hi everyone who happens to drop by 😊 Your new friend’s name is Grace from the Philippines.  Expression is my passion. I’ve been writing inconsistently, and I want to return to it now after some years.  My site is created because most of the time I have no one to talk to (lol not really) about the things that interests me in.  Plus, as much as I would like to write my thoughts, I want to read and know about others’ as well.

My occupation: SDA missionary

I didn’t finish my college. During my first year in the university I decided to join the missionary team in our church because I received the movings of the Spirit that Jesus will be coming anytime soon.  It was a simple principle that I want to spend my days preparing for that great day.  Friends, meeting Jesus needs preparation too; it is a lifetime work because the true future life promised to us in the Bible is not in this world.

By that, we missionaries have a different kind of educational system and upbringing.

We are trained to become musicians for the glory of God.  My playground is my piano and my violin and the uke. I belong to a gospel choir as well.

We are also trained to teach the gospel. Because we have been blessed by all bible based teachings we hold the obligation to impart the light received.

We are homekeepers.  Domestic life is a science essential for missionaries like us, though it is important to be learned of all youth.  Unfortunately it is a study neglected by so many today, thus many are not equipped to make a home after the will of God.

We are health reformers. Our body is the temple of the Holy Spirit and to be able to serve well our health must be well. We do not eat meat of any kind nor take synthetic drugs. This going against tradition is not a mere trend as some organizations would advocate, but God’s instructions if we want our health to be preserved.
